It is a spice that evokes feelings of warmth and satisfaction! How can you get the food you desire without over-paying for delivery costs? This vegetable green curry recipe is one that the entire family will fall in love with. Filled with healthy vegetables and amazing flavours sure to get your taste buds singing! It is a simple one-pan recipe that is quick to make for those nights you don’t have as much time. Simply get your rice cooking, mix your ingredients and off you go!


Vegetable Green Curry Ingredients

(Recipe made to serve 4)

  • 4 Tbsp. Vegetable Oil (divided)
  • 1 Block of Extra Firm Tofu (cubed)
  • Small Onion (diced)
  • 4 Cloves of Garlic (minced)
  • 3 Tbsp. Green Curry Paste
  • 2 Medium Carrots (peeled and sliced)
  • 20 Snow Peas (cut in half)
  • 10 Baby Corn (cut in half lengthwise and widthwise)
  • 10 Button Mushrooms (quartered)
  • 2/3 cup Vegetable Stock
  • 2 cups Coconut Milk
  • 2 Tbsp. Soy Sauce
  • 4 tsp. Lime Juice
  • 1 tsp. Brown Sugar
  • Rice (to serve)


Vegetable Green Curry Directions

  1. Heat a large pan/wok over medium-high heat
  2. Fry one Tbsp. of vegetable oil and the tofu to the pan, stirring occasionally until browned on both sides
  3. Remove and drained on paper-towel lined plate
  4. Add 2nd of vegetable oil and onions into the pan – fry until soft and translucent
  5. Add the garlic and fry for 1-2 minutes until soft and fragrant
  6. Add the curry paste as well as a bit more oil (if the pan seems dry)
  7. Fry the curry paste for about 2 minutes
  8. Add all vegetables (carrots, baby corn, mushrooms) to the pan and fry for 3-5 minutes until the carrots begin to soft
  9. Add the vegetable stock and coconut milk to the mixture
  10. Reduce heat to medium
  11. Simmer the mixture gently until the vegetables are fully cooked
  12. Add the tofu, soy sauce, sugar and lime juice to the pan
  13. Adjust flavors according to personal preference.
  14. Remove from heat and serve over rice
