    Healthy Mini Doughnuts

For the month of July, food from the Calgary Stampede midway is a focused satisfying dreams and cravings. The unique and delicious surprises can be anything from Cereal Monster Sandwiches to Crispy Chicken Feet on a Stick. No matter where your taste buds lead you on Stampede week, you can guarantee that the food will make your eyes light up but your stomach upset. Most choices on the midway, unfortunately, are not a healthy option.

One of the most popular and sought after treats on the midway are mini doughnuts. Covered in sugar or powder, these delectable little bite-size donuts are always an addicting choice. And while the term ‘mini’ may seem like a good choice, these doughnuts are served in a large bag (or even a bucket) and taste good enough that you will eat the whole batch.

Save yourself the sugar, calories, and stomach upset and make your own mini doughnuts at home! This Healthy Mini Doughnuts recipe cuts back on the sugars and uses a doughnut maker instead of a deep fryer. These 62-calorie mini snacks are the perfect thing to binge on instead of the stampede sweets.

    Ingredients (Makes 12 snacks)

    – 2 cups Self-Rising Flour

    – 1 tsp. Baking Soda

    – ½ tsp. Salt

    – ¾ cup Coconut Sugar

    – 5 Tbsp. Coconut Oil

    – 1 tsp. Vanilla

    – 1 tsp. White Vinegar

    – 1 cup Water

    – Natural Sprinkles to decorate

    1. Mix dry ingredients together in a large bowl (flour, baking soda, salt, coconut sugar).
    2. Make 3 holes in the dry mixture (2 small and 1 large).
    3. Pour the vanilla and vinegar into the smaller holes, and the coconut oil into the larger hole.
    4. Pour the water over the top of the mixture.
    5. Mix together well, ensuring that the flour is completely combined.
    6. Spray your doughnut maker with cooking spray.
    7. Spoon small spoonfuls of the mixture in to your doughnut maker.
    8. Cook doughnuts until they are golden brown in colour.
    9. Choose how you would like to decorate and flavor them (chocolate drizzle, natural sprinkles, cinnamon, coconut).
    10. Serve and enjoy!

Choose these homemade doughnuts over the deep-fried, sugar-coated, calorie-filled doughnuts you would normally get at the Stampede. Thank you to healthymummy.com for the great alternative recipe.
