Sunday Recipe Makeover: Spicy Vegan Jambalaya

Ingredients
Serve four
- 3 Tbsp Extra Virgin Olive Oil
- 1 Large Onion – diced
- 3 Cloves Garlic – chopped
- 4 Stalks Celery – diced
- 1 Tbsp Jalapeño – diced (depending on your spice preference, make it a heaping tablespoon if you want to amp up the heat or use less than recommended for a reduced amount of spice)
- 4 cups Tomatoes – diced
- 2 cups Uncooked Brown Rice
- 4 ½ cups Vegetable Stock
- 2 tsp Vegan Worcestershire Sauce
- 3 Bay Leaves
- 1 tsp Smoked Paprika
- 2 tsp Hot Sauce (choose your favorite, Sriracha works well)
- Salt and Pepper to taste
- 1 ½ cups Cilantro – chopped (also some for garnish)
Directions
- Heat the extra virgin olive oil in a large saucepan (be sure to choose one with a lid)
- Add the onion, garlic, celery, and jalapeno
- Sauté ingredients until onions are transparent (roughly 3 minutes)
- Add the tomatoes and cook for one more minute until they are soft
- Add the brown rice, vegetable stock, Worcestershire sauce, bay leaves, paprika, hot sauce, salt, and pepper to saucepan and stir until mixed
- Let the mixture cook for roughly 20-40 minutes or until the rice has absorbed the liquid and cooked completely
- Stir in the fresh cilantro
- Serve into bowls with extra cilantro as garnish
- Enjoy!
