Heart-y Vegetable Soup

Ingredients (Makes 5 servings)
- 1 can Cannellini Beans (drained and rinsed)
- 1 Tbsp. Olive Oil
- ½ Large Onion (diced)
- 1 Carrot (diced)
- 2 Stalks Celery (diced)
- 1 Small Zucchini (diced)
- 1 Clove Garlic (minced)
- 1 tsp. Thyme
- ½ tsp. Sage
- ½ tsp. Salt
- ¼ tsp. Ground Black Pepper
- 4 cups Low-Sodium Vegetable Broth
- 1 can Diced Tomatoes (include juice)
- 2 cups Packed Chopped Spinach
- 1/3 cup Parmesan Cheese
Directions
- Heat the oil in a large pot over medium-high heat.
- Add the onion, carrot, celery, zucchini, garlic, thyme, sage, salt, and pepper to the pot.
- Cook the mixture, stirring occasionally.
- Continue to cook until the vegetables are tender.
- Add the vegetable broth and the tomatoes, and bring the mixture to a boil.
- Add the beans and spinach leaves to the mixture and cook until the spinach is wilted.
- Serve with parmesan on top.
